Olenko’s Wonderfully Raw Coconut Macaroons

5 very ripe organic bananas

2 cups organic cacao powder

3 TBS organic lucuma powder

1 tsp cinnamon

pinch of pink Himalayan salt

3 cups fresh coconut meat from Jamaican coconut

1 cup fresh coconut water

4 TBS raw coconut  nectar

5 dates

3 TBS raw buckwheat grouts

shredded coconut as a topping

Mix all in the Vitamix or food processor accept buckwheat grouts and shredded coconut. In the brownie dish sprinkle some buckwheat grouts, pour the mixture in and sprinkle some shredded coconut with raw cacao powder on the top. Place in the freezer and freeze it for about 2-3 hours until frozen. Take the pieces out and enjoy, transfer the rest of them to a glass container. Store in a freezer for 2 weeks. They are smooth, coconut like and amazing! Enjoy : )
