Olenko’s Spring Salad with Beans, Clementines and Israeli Artichokes

Serves 2

Ingredients:

  • 2 cups of organic dry black beans
  • chopped 3 clementines
  • chopped small onion
  • cubed 5-6 Israeli artichokes ( Jerusalem artichokes/sunchokes)
  • 7-8 Asian long green beans cut in 1 inch pieces
  • cubed medium cucumber
  • chopped baby fennel greens
  • pinch of Himalayan pink salt
  • cayenne pepper
  • fresh juice from ½ lemon
  • cumin and cinnamon to your taste
  • 1 tbs of cold press organic hemp oil

Soaked organic black beens in pure water overnight. Drain the water, add clean water just to cover the beans and cook them for 10-15 minutes. When they are ready drain the water again. Put the cooked beans in a large bowl and add other veggies. Mix well, add spices, hemp oil and fresh lemon juice. Serve right a way or keep it in the fridge and after few hours the flavors will blend together. So healthy and yummy.
