Olenko’s Raw Vegan Chocolate Granola Bars

This bars are gluten free, nutritious and packed with supefoods. They are great for kids, as a breakfast on a go, as a healthy snack or raw dessert. And they are very easy to make : )

Granola Base:

2 cups pure water

16 pieces organic Brazil nuts

5 TBS organic maple syrup

1 TBS ginger powder

1 TSP cinnamon powder

1 cup organic raw cacao powder

Mix all in the Vtamix or high speed blender. Set aside.

In a large mixing bowl place:

2 cups gluten free organic oats

¼ cup organic shredded coconut

¼ cup organic raw cacao nibs

¼ cup organic almond pieces

¼ cop organic goji berries

¼ cup organic golden mulberries

Mix well and add the chocolate liquid, combine all ingredients with a large spoon. Place aside for 15 min and make your chocolate layer.

Raw Chocolate:

5 TBS organic coconut oil

4 TBS organic raw cacao powder

2 TBS lucuma powder

½ tsp reishi powder

2 TBS organic date sugar

2 TBS maple syrup

pinch of Himalayan pink salt

In a glass pot melt the coconut oil on a very low setting, temperature should not be higher then 100 degrees F. Add raw cacao powder and other ingredients. Mix well with wooden spoon, until smooth. Set aside.

Place your Granola mixture in a brownie container or low glass container, using spoon and press to the bottom so is nice and flat. Pour over the chocolate mixture and sprinkle some dry cherries, raw pistachio, shredded coconut, goji berries, mulberries on the top. If you have a brownie dish press the top part to divide the bars into pieces ( if not you will cut them later into pieces with the knife). Place in a freezer for about 30 min to 1h to set. Take out from the freezer and enjoy, store the rest of the bars in a glass container in the fridge or freezer. Enjoy : )

* If you have another nuts or dry fruits you can use instead on a top of the chocolate. Just experiment : )
