
4 large ripe organic bananas
3 cups organic cashew meal or almond meal
2 cups organic cacao powder
2 1/2 tablespoons organic maple syrup
1 teaspoon organic cinnamon powder
1 cup organic lucuma powder
1 teaspoon Himalayan pink salt
2 cups pure water
* to make the brownies sweeter can add dry mulberries, dates, prunes or other dry fruits you like
In the big bowl mix together all ingredients accept the bananas and water. In a separate bowl mix ripe bananas with the fork and add to the dry ingredients and keep mixing slowly adding water. Mix well with a wooden spoon until smooth. Add dry fruits if you wish. Line glass pan with parchment paper and pour the mixture over. Using spoon press into the pan and make it smooth on the top. Place the brownies at the bottom off the dehydrator at 115 F for about 6 hours. At this point they are warm, soft and gooey and you can eat them like this or take them out of the glass pan with the parchment paper and dehydrate on the screen for another 6-8 hours. To speed up the process you can cut them into small pieces. When you think they are ready and chewy inside and hard- chocolate like outside serve them warm with fresh fruits like berries or raw ice cream. Keep some in the fridge for few days and you can serve them cold or warm them up in the dehydrator. I also keep some in the freezer for few weeks and enjoy them later. So good!!!
*If you don’t have a dehydrator you can bike them at the lowest setting of your oven for about 20-30 minutes.
