Olenko’s Raw Hazelnut-Carob Cheesecake

Olenko’s Raw Hazelnut-Carob Cheesecake with berries and cacao nibs. When you are on the raw food diet you can have your cake and eat it too ; ) This cake is very easy to make. You will need Vitamix or high speed blender and a cake dish or glass container.

Carob layer

1 cup raw carob powder

1/2 cup raw cashews

5-6 dates

2 TBSP maple syrup or agave

cinnamon to taste

pink Himalayan sea salt

Mix all in the Vitamix or high speed blender with 1 cup of pure water, then add 2 TBSP chia seeds (soaked in ½ cup of pure water for 20 min) and shredded coconut, about 3 TBSP, don’t mix in the Vitamix just with the spoon. Pure it in the cake dish.

Hazelnut layer
2 cups of hazelnuts (soaked overnight)
1 cup of pure water
2 TBSP of maple syrup or raw honey
1 TBSP of coconut oil
vanilla powder or extract to your taste (I used 1/2 tsp)
Mix the hazelnuts with water first, then add the rest of the ingredients, when smooth pure it in the cake dish over the carob layer. Sprinkle with raw cacao nibs. Put it in the freezer for about 3-4 hours. Decorate with berries and flowers before serving. Enjoy! 

* You can freeze the cake too, then take it out 30 min before serving : )
