Olenko’s Raw Coconut Ice Cream with Pomegranate and Blueberries

This recipe is inspired by Brazil and is part of Introducing “All Around This World: Latin America,” the first CD of its kind from “All Around This World,” a world musics and cultures program for families with little children. Ice Cream Ingredients:
  • 1 cup raw cashews
  • 1 cup coconut water or pure water
  • 2 cups coconut meat ( from Thai Young coconut)
  • ½ cup raw honey or agave
  • 2 tsp pure vanilla extract
  • ¼ tsp pink Himalayan salt
  • ¼ cup coconut oil
  • 2 tsp dry coconut shreds

Additional Ingredients:

pomegranate seeds

blueberries

Directions:

Mix all ingredients in a Vitamix or high speed blender until creamy, then add to your ice cream maker and follow your manufacturer’s instructions. Or pure the mixture into glass container and freeze it overnight. When ready to serve put blueberries on the bottom of the glass then scoop some ice cream and add pomegranate seeds on the top. Enjoy!
