Olenko’s Raw Blueberry-Fig Cake

3 cups fresh blueberries

15 ripe raw figs

4 very ripe bananas

5 dry dates

2 TBS fresh lemon juice

1 cup raw buckwheat

½ cup of raw almond milk

pinch of cinnamon powder

pinch of ginger powder

At the bottom of cake dish place raw buckwheat. In the vitamix mix raw figs with dry dates, pure the mixture gentle into the cake form. Then mix bananas with almond milk, blueberries, lemon juice, ginger, cinnamon. Pour the mixture to the cake dish. Freeze it for about 5-6 hours or overnight. Serve with raw figs, lemon and fresh mint. Enjoy : )
