Olenko’s Gluten Free Chocolate Chip Cookies

This cookies are perfect with tea or coffee, and they are so easy to make, gluten free and actually good for you!

You will need:

2 cups garbanzo flour

1 cup shredded coconut

2 ripe bananas

2 cups water

5-6 TBS maple syrup

1 TBS vanilla extract

1 tsp pumpkin spice

1 tsp ginger powder

1/2 cup sunflower seeds

5 TBS chia seeds

1/4 cup coconut sugar

1 cup small vegan dark chocolate chips

1 cup almonds for the top

 

 

 

 

In a large bowl mix all ingredients accept the almonds.

Using your clean hands or spoon form cookies and place them on a parchment paper.

Add one almond on the top of each cookie.

Bake cookies for about 30 minutes on 400F.

Let them cool down and enjoy.
