Olenko’s Christmas Snowballs

Snowballs- vegan, raw, gluten free:

2 cups raw organic almonds

10-12 organic Medjool dates

4 TBS raw organic cacao powder

1 cup raw organic pumpkin seeds

2 TBS organic ginger powder

2 TBS pumpkin spice

2 TBS organic lucuma powder

3 TBS pure water ( or a bit more see how they stick in the food processor)

Toppings:

goji berries

raw pistachios

shredded coconut

raw cacao powder

lucuma powder

Directions:

Combine all ingredients ( accept the toppings) in a food processor and pulse. You want to see small parts of the almonds in the paste. Stop pulsing when all ingredients start to stick together. Clean your hands and using a spoon scoop the paste and form balls in your hands. Then roll them in the listed toppings. Little messy but fun : ) They are really yummy!!! Makes about 25-30 balls depending on the seizes of the balls. Store them in the glass container in the fridge for 5 days or freeze them and enjoy later. Really great for Christmas healthy dessert : )
