Olenko’s Cherry-Coconut Pudding

Thai young coconut meat

cherries

frozen banana

2-3 dates

10 dry cherries

dry coconut flakes

pure water

I had cherries and coconuts, so I made this yummy pudding. Directions;

Freeze ripe banana overnight. Scoop the meat from 2 Thai young coconuts, you should get ½-1 cup of the fresh meat. Soak dates and dry cherries in 1 cup of pure water for 20 minutes. In the Vitamix or high speed blender mix all and add the frozen banana at the end to make it creamy. Serve with fresh cherries and coconut flakes. It’s so yummy and perfect for a summer dessert! You can also freeze it to make raw ice cream . Enjoy : )
