Guilt Free Strawberry Cake
Yes, you can have your cake and eat it too! This cake is raw, vegan and gluten free, it is so light and refreshing and actually good for you. I was told that this cake tastes just like yummy ice cream. Your family and friends will love it. This is great cake to make for a family party or celebration. The secret ingredients are fresh seasonal strawberries from the farm. They are so sweet and delicious. You can substitute the strawberries with any seasonal fruits, such as blueberries, cherries, currents, mango, persimmons, etc…
Base:
2 cups Medjool dates
1 cup walnuts
Cake:
3 cups raw cashews -you can soak them for 2-3 hours for easier blending
2 cups strawberries
1 cup coconut milk
1 ripe banana
2 TBS coconut oil (melted)
1 TBS vanilla
3 TBS maple syrup
Instructions:
Process your dates and walnuts in the food processor until you have sticky, dough-like consistency. Then take the dough and press into a medium size cake form, you can put coconut oil or parchment paper at the bottom, so it will be easier to take the cake out when is ready. Then process all the cake ingredients in a high speed blender or food processor. You want to have a cream like consistency. Pour the mixture over the base and let it set in the freezer for about 4-6 hours. When you are ready to serve the cake decorate it with seasonal fruits or edible flowers. Enjoy.
