This salad is inspired by my trip to Jamaica. I love curry and Jamaican fruits like mango and pineapple. So I created this salad and the flavors are amazing. You will need:
3 cups dry organic kidney beans ( or any other beans you like)
2 ripe mangos (cubed )
¼ of pineapple or more if you love pineapple ( cubed )
1 small purple onion (cubed )
juice from ½ organic lemon
handful of organic parsley (chopped )
handful of organic cilantro (chopped )
1 cup organic green grapes
1 TBS of Jamaican Curry (turmeric, black pepper, cumin, red pepper, ginger, cloves, nutmeg)
1 tsp Pink Himalayan salt
2 TBS Bragg Apple Cider Vinegar
2 TBS Hempseed oil
Soak the beans overnight in a pure water, drain the water and add new water and then cook them until soft. Wait until the beans to cool down and mix with the rest of you ingredients in a large mixing bowl. Let it marinate in the fridge before serving for about 2h. You can serve the salad with edible flowers, like Marigold flowers. This salad is a great summer salad that you can bring for a BBQ or outdoor picnic. Enjoy : )
*optional- you can add ½ organic orange cubed pepper if you want. Taste great with or without it. Some people are allergic to peppers.
