
Autumn is my favorite time of the year. This raw frozen dessert is so delicious and just perfect for fall.
Ingredients:
2 ripe frozen bananas
½ cup raw cashews
2 dates
2 dry figs
2 TBS of pure water
2 inches of raw vanilla bean
pinch of cinnamon
pinch od nutmeg
pinch of ginger
Toppings:
raw cacao beans
2 cinnamon sticks
raw chocolate with jungle peanuts
raw date cigars
Directions:
Process all ingredients in the Vitamix or high speed blender. Top it off with raw cacao beans, cashews, cinnamon sticks, raw chocolate with jungle peanuts and raw date cigars. Sprinkle some cinnamon powder. Serve immediately. So yummy!!! Enjoy : )
Raw Chocolate
1 cup raw cacao
1 TBS coconut oil
maple syrup to your taste
2 TBS jungle peanuts
In a glass pan melt the coconut oil then add raw cacao, the temperature should be 95-98F and not too hot to your touch. Keep mixing with the spoon, add maple syrup, when all mixed in and the texture is smooth turn off the stove. Pour the liquid chocolate in the mold, sprinkle with jungle peanuts, then pour more chocolate on the top. Place the chocolate in the freezer for 20 minutes to set and then transfer to glass dish and keep it in the fridge. Enjoy : )
Raw Date Cigars

Process pitted dates in the food processor, and add shredded coconut. Roll them in the shape of small cigars and roll them more in dry coconuts flakes.
