
Crepes:
5 large organic ripe bananas
2 small organic sweet potatoes (cubed)
1 cup of pure water
1 tablespoon of cinnamon
fresh juice from 1 lime
5 drops of Young Living lemon essential oil (optional )
If you want your crepes more sweet add a little of maple syrup or agave to your taste. I like my food not to sweet, more fruity : )
Directions:
Mix all ingredients in the Vitamix or other high speed blender. Mix until smooth. Pour batter at time onto nonstick teflon sheets. I made 10 crepes from this recipe. Use a spatula to form smooth circles. Dry in the dehydrator for 5-6 hours on 110 F. Check them and when they are ready peel them carefully. Store them in the fridge and when you want to serve them you can warm them up in the dehydrator.
Carob Filling:
½ cup organic carob powder
5 dates
½ cup organic cashews
pinch of cinnamon
1 cup pure water
Mix all in the Vitamix until smooth. Chile in the fridge and when ready to serve the crepes spread the filling inside and on the top. Tastes great with fresh kiwi, blueberries, pears, watermelon and mango on the side. Serve with fresh made watermelon juice. This is amazing as raw dessert or breakfast or brunch. Enjoy : )
